HVAC Systems contain cold metal pipes that collect condensation from the moisture in the air, similar to a glass of ice water. This condensation typically drips off the system into a drain pan and runs down a drain to the outside of your home. Dirt, debris, bacteria growth, dust, etc… all kinds of things can restrict the flow of that drain line and cause a back up. Another common cause of leaks is a whole in your drain pan cause by damage or rust.
